A hot, steamy casserole may not sound like your thing, but that’s because you haven’t tried this unbelievably dreamy Tater Tot Cheeseburger Casserole. Standby for the best thing you’ve ever eaten.
So, there’s this genius over at Broma Bakery. Her name is Sarah, and she dreamed up this Tater Tot Casserole. This tantalizing combination of all the savory things I love; potatoes, delicious cheeseburger meat, wild cherry tomatoes, and CHEESE. Do any of you actually remember eating tater tots as a kid? I’d smother mine in ketchup and savor every last bite.
You can find the recipe here. For once, I followed a recipe to the letter, and it came out as perfectly, as expected.
I’m not generally a fan of “messy” food, but the order of the tater tots hides the mess of deliciously cheesy meat underneath. One skillet will serve five people, making this the ideal “movie night”, “game night”, or “game day” entree.
For those of you who are planners, like me, you can prep this casserole the night before by preparing the bottom layer (the cheeseburger part) and keeping it in the fridge overnight. About 30 minutes before it’s time to eat, arrange the frozen tater tots in concentric circles on top of the meat and bake until they’re golden and crispy. This way, the top layer of the casserole stays crispy and fresh.
